Creamy, Healthy Egg Sandwich

Ingredients (7)

SERVES 1

5 eggs, split into 3 whole eggs + 2 egg whites

1tbsp Low fat cream cheese

1tsp mustard

Salt & pepper to taste

4 slices multigrain or light white bread

A squeeze of Sriracha

Handful of fresh chives

Method

STEP 1

Boil 5 eggs for 8 minutes and peel off the shells


STEP 2

Remove the yolks from the eggs and set 2 aside


STEP 3

Combine the remaining 3 egg yolks with the cream cheese, mustard, salt & pepper and then mash


STEP 4

Chop up the egg whites and mix in with the paste


STEP 5

Spread the mixture evenly on the 2 slices of bread with chopped chives and a squeeze of sriracha and top with the other slices of bread
