Step 1
Chop the pepper and carrots and set aside. Melt the butter in a pot, wash the rice and add

Stir on a low heat until dry, then add coconut milk, season with salt and 1 cube chicken seasoning, then add 250ml water. Stir, cover and cook until the rice is cooked through

Slice the onion and mince the ginger. In a separate pan, heat the vegetable oil and sauté the onion and ginger

Add the carrots and peppers, then season with salt, onion powder and 2 cubes chicken seasoning. Stir well and fry until softened
Step 5
Chop the spring onion. Add the cooked coconut rice to the vegetables and combine, then add coconut flakes and spring onion. Add the meatballs and chilli flakes and stir well, then serve and enjoy!
