This simple rice dish is a perfect comfort food with minimal clean up for cold days, just be careful that you don't burn your mouth


Serves 4


Step 1
Wash the rice and set aside
Step 2
Chop the mushrooms, sausage and chicken thighs into bite size pieces, then marinate the chicken in dark soy sauce, Shaoxing wine and corn starch
Step 3
Cook the mushrooms and sausage in a clay pot to render the fat from the sausage, then remove and set aside
Step 4
Add the rice to the pot and cover with chicken stock, cover and cook until some of the liquid had been absorbed
Step 5
Add the marinated chicken, cover and cook for 10 minutes, then add the mushroom and sausage to cook until the chicken is cooked through and the rice is soft. Serve topped with soy sauce and spring onions and enjoy!
