Quick, protein filled veggie lunch
Ingredients
Serves 1
100g black beans
40g grated mozzarella
2 mini tortilla wraps
1tsp Cajun seasoning
3 sprays oil
Sriracha (optional, to serve)
Method
Step 1
Add oil, black beans and Cajun seasoning to a pan on a high heat
Step 2
Mix and then mash with a fork
Step 3
Top with cheese, put the wrap on top and flip
Step 4
Put cheese on the other side as well as the other wrap and flip again
Step 5
Slice and serve with veg of your choice and sriracha
