Straight from the chateau in France, this barbecued duck breast goes so well with green bean and orange salad

Serves 2


Step 1
Score the skin of the duck breast in a criss cross pattern. Season generously with salt and pepper
Step 2
Place the duck breast skin side down onto the barbecue. Cook for 5 minutes until golden and crisp. Flip it over and cook for a further 5 minutes or until its to your liking. Remove from the barbecue and let it rest
Step 3
In a bowl add green beans, baby gem, orange and walnuts
Step 4
Make the dressing by combining olive oil, red wine vinegar, honey and Dijon mustard
Step 5
Pour the dressing onto the salad and toss till well coated. Transfer the salad onto a serving plate
Step 6
Slice the duck breast. Drizzle some olive oil and squeeze lemon juice on top of the duck and let it sit for a minute. Serve with the salad
