Step 1
Start by halving your bagel and toasting it. Then, dice your tomato into small pieces and set aside in a bowl

Dice your onion, add to the tomato and season with salt and pepper
Step 3
Cut your garlic clove in half and then rub the inside on the bagel
Step 4
Next, take your mozzarella and cut into small strips. Place onto the bagel and top with the tomato and onion mixture
Step 5
Next add your balsamic vinegar into a pan with the sugar and heat until the sugar has melted and the vinegar reduced slightly
Step 6
Spoon the vinegar onto the bruschetta bagel, drizzle over some olive oil, season with salt and then garnish with a few basil leaves
