Preheat your oven to 180ºC. Chop the parsley, bacon and 1 onion. Add the mince, 1 egg, breadcrumbs and parsley to a bowl
Fry off the bacon and onion in a dry pan with balsamic vinegar, mustard and brown sugar, then fry until the onions have caramelised
Add the onion mix to the bowl and mix until well combined
Beat 1 egg and brush over one edge of the puff pastry. Add the sausage mince mix to the other side of the pastry and roll up
Slice and place on a lined baking tray, brush with the remaining egg, top with poppy seeds and sesame seeds, then bake for 30-35 minutes
Dice the second onion and fry with olive oil, minced garlic, salt and pepper. Add chilli flakes, tomato puree, chopped tomatoes, parmesan and basil. Cover and cook until the tomatoes reduce down. Serve the sausage rolls with the sauce to dip and enjoy!
