Straight To Your Mouth
These marinated eggs are perfect to put on top of ramen or just eat as a delicious snack
6 medium eggs
250ml soy sauce
10g spring onion (whites)
2 cloves garlic
3-4 star anise
5g white peppercorns
Boil the eggs for 6 minutes and 30 seconds, then place them straight in ice water. Once very cold, peel and set aside
Chop the spring onion and ginger and crush and peel the garlic
Place the ginger, spring onion, garlic, soy sauce, star anise, pepper, sugar and 100ml water in a saucepan and cook on a boil for 5 minutes
Strain into a jar and refrigerate for 20-30 minutes until cold, then add 100ml water and the eggs. Refrigerate overnight, then serve with ramen and enjoy!
