Description

Cure some breakfast cravings, and prevent food waste by repurposing my ratatouille recipe into this hot tamale!

Method

Step 1
Heat plenty of oil in a frying pan, then fry off the fennel seeds, chilli flakes and harissa on a medium heat
Step 2
Add the ratatouille and juice of the lemon, bring up to a simmer, and make three wells
Step 3
Crack the eggs into the wells, turn the heat down, and cover with a lid. After 5 minutes, the whites should be cooked, and you can serve with chopped parsley
