Ingredients (11)

SERVES 1

2 precooked chicken thighs

1 handful mushrooms

1 handful cherry tomatoes

1 packet rice or 250g precooked rice

1tsp pepper

1tsp oregano

1tsp garlic granules

4 sprays (1tbsp) oil

1 generous squeeze sriracha

1 generous squeeze mayonnaise

1 handful jalapeños

Method

STEP 1

Put a pan on a high heat and add 3 sprays of oil. Whilst that’s heating, chop the mushrooms and slice the tomatoes


STEP 2

Fry the mushrooms and add the precooked chicken thighs, breaking them up with a spatula. Add in the tomatoes and rice with 1 more spritz of oil, pepper, oregano and garlic granules and mix


STEP 3

Put everything from the pan into a bowl and squeeze over the sriracha and mayo and sprinkle over the jalapeños and you’re ready to eat!
